ANALISIS PERBEDAAN MINYAK GORENG CURAH DAN MINYAK GORENG KEMASAN MELALUI UJI KERAPATAN DAN UJI TEGANGAN PERMUKAAN
Abstract
Cooking oil has long been an important part of public consumption in various parts of the world, including Indonesia. On the market, cooking oil is available in various types, two of which are bulk cooking oil and packaged cooking oil. One way to find out the quality value of cooking oil is through physical test, such as test density and test surface tension. With the aim to determine the differences quality between bulk cooking oil and packaged cooking oil. The research method used is the experimental. Measurement of the density value is done by comparison of mass per volume of cooking oil, while to know the value of surface tension using capillary rise. Based on the research that has been conducted shows that the packaged cooking oil has a value of density and surface tension bigger than the bulk cooking oil. Oil density average value of packaged cooking oil is 830 kg/m3 bigger 10,1% of the bulk cooking oil. Oil surface tension average value of packaged cooking oil is 0,0238 N/m bigger 48,6% of the bulk cooking oil.
